Sweet and Spicy Saba Furikake
さば缶で甘辛ふりかけ
INGREDIENTS
1 tablespoon olive oil
1 tablespoon minced ginger
1 can saba (mackerel) in brine or water
1 teaspoon shoyu (soy sauce)
1 teaspoon sake
1 teaspoon mirin
1 teaspoon sugar
1 tablespoon iri goma (toasted sesame seeds)

1: Heat the oil in a medium saucepan until shimmering. Add ginger and cook until fragrant, about 1 minute.
2: Add the canned saba, including the brine or water, breaking apart into small flakes. Keep stirring over medium heat until half of the brine has evaporated.
3: Add the shoyu, sake, mirin, and sugar and stir frequently until the liquid is almost completely reduced.
4: Add the iri goma and mix well!
5: Remove from heat and sprinkle over rice, noodles, salad, or you can just eat with a spoon! If you have leftovers store them in the refrigerator for 4-5 days!
