INGREDIENTS

80 grams kimchi, roughly chopped

1 can of saba (mackerel) in water or brine 

½ tablespoon goma abuura (toasted sesame oil)

1 tablespoon Japanese mayonnaise

1 teaspoon suri oroshita shouga (grated ginger)

1: Put saba in a medium bowl and flake well using chopsticks, fork, or your fingers.

2: Add the kimchi and any leftover brine from chopping, goma abuura, Japanese mayo, and shouga and mix well. And that’s it; you’re ready to dig in!

3: Serve over rice, noodles, natto, maybe even put on toast and top with cheese and make a Kimchi Saba Melt.
